How to make duhat wine?
Wash fruits
to remove dirt. Discard spoiled ones.
Crush fruits with bare hands or potato crusher without bruising the
seeds. Extract the juice by passing
through a sinamay or cheesecloth. To the residue, add water equal to the first
extract. Heat to boiling. Strain.
Combine
the first and second extracts. To every
3 parts of the extract, add one part of refined sugar and heat to 70°C, Cool.
Add one
teaspoon to every 2 liters of the sweetened juice and transfer into wine
barrels or demijohns (damajuana). Set
aside to ferment for a month until o more bubbles or carbon dioxide gas
evolves. Set aside for another month.
Decant the clear liquid and age in barrels for at
least one year.
