Chicken Inasal

Chicken Inasal is a grilled chicken dish, this is done by marinating chicken pieces in a unique blend of spices and grilling them until done.
Best served on Banana leaves with Tomatoes and Itlog na maalat as its side dish

INGREDIENTS:
Chicken - 2 lbs. cut into serving pieces

MARINADE:
Ginger - 2 tablespoons, minced
Garlic - 2 tablespoons, minced
Lemongrass - 3/4 cup, chopped
Coconut Vinegar - 1 cup
Lemon or Calamansi Juice - 1/2 cup
Salt - 1 tablespoon
Brown Sugar - 1/4 cup
Lemon Soda (Softdrink) - 1 cup
Ground Black Pepper - 1/2 tablespoon

BASTING SAUCE:
Annatto Oil (Atsuete oil) - 3 tablespoons
Margarine - 1/2 cup, softened
Salt - 1/4 teaspoon
Lemon or Calamansi Juice - 1 teaspoon

COOKING PROCEDURE:
• In a large bowl, combine chicken, lemongrass, salt, ground black pepper, ginger, garlic, brown sugar, vinegar, lemon-lime sode, and lemon juice.
• Stir  the mixture until every ingredient is well incorporated. Marinade for 1 to 3 hours.
• In a bowl, combine margarine, annatto oil, salt, and lemon juice then stir. Set aside for later use.
• Grill the chicken while basting generous amount of margarin mixture.Transfer the grilled chicken to a serving plate.
• Served with Spice Vinegar.
